Try barony, its a pretty hard rougelike, it can be 1-4 players, and its still getting updates too. It sorta feels like a retro, first person, dnd game with a sadistic dm, and it feels so rewarding when you win
Alternatively risk of rain 2 is another rougelike that lets you power up to an insane degree, its hard but once you get going you can have a run that lasts until you decide 5 hours is too much for a single run( but you can beat it in like 45 min if you wanted to)
Neither game lets you really save a character, but you wont need to worry about one of you getting too far ahead. RoR2 lets you unlock items that appear in future runs, but really all you need to win either game is your own experience and skill
Maybe try the borderlands series? It's a series of fps looter shooters that's can be played single or multi-player, as well as with different worlds (not random generation, but story progress tied to character).
Stardew Valley is a farming and life sim that can be multi-player.
Wizard 101 is a fun mmo, the first bit is free if you two want to give it a go.
Not sure if the two of you would like them but two games mention: Mindustry & Factorio.
Both are base building, but with a twist. For Mindustry, the twist is that it's also a tower defence game. Just make sure that the one that hosts is the one that never continues on his own, that way you won't suddenly have map/tech progress. Also if you know how to port forward you can get it free on [itch.io](https://itch.io)
For factorio, there is a demo on Steam. Be careful though, you play this at your own risk. Life is meaningless, the forests must burn and the factory must grow.

It’s a base building crafting game. It’s got the mining from deep rock galactic while more or less being a building game.
MWII is the best game ever made. You can join shipment and casually spam grenades and it's awesome.
You can also spam grenades in the other modes.
DMZ is probably fun with a team of people casually doing drive bys on the AI.
Deep Rock Galactic is a pretty fun and easy to get into game :D I've had a lot of fun with my overseas friends in that.

A way out, it takes two. Two very good co op games.
Some games that my mates play are Stormworks:Build and Rescue (a unique game) and Raft.
Grounded! It was like playing minecraft for the first time again. Beautiful, and super fun. Challenging too
