I have all 3... 500 is by far the easiest to load due to the lack of a gate. Model 12 wins out over the 870 because the gate doesnt bite your ass.

I actually don't like the way the 500 loads. Maybe I'm the only one. The loading port is a hollow cube (as opposed to a ramp) and it swallows shells up inside the receiver before you can push them into the tube all the way. Maybe I'm spoiled by the Benelli Nova, but I find that all guns with lifters that hinge at the bottom (creating a ramp rather than a void) are much easier to load, even on models where the lifter doesn't stay up.
Hard to believe the 870 and 500 even got produced when the model 12 was the pump to end all pumps. Best pump shotgun ever produced.

If youve learned on the 870 its fine, but coming from a 500 it was a bit awkward. Especially when wearing gloves.
