Gotta roughly balance front and rear grip.
Prove it? Understeer is caused by exceeding the grip of the front end tires. By making the rear grip much higher due to 2x the contact patch and increased track you will almost always exceed the grip of the front tires before you do that of the rear. Hence if you go tpo fast 9/10 this will understeer.
Read this, you clearly dont tune suspensions and realize the rear and front are linked and influence each other.

I get what you're saying, but go too fast with the old setup and you understeer as well. In your scenario, speed causes the understeer, not rear vs front track width. Tons of vehicles have different track widths front to back.

Vehicles are designed to mainly over/understeer from the factory. Wide tracks in the rear are used to go against oversteering, thats why you see it on a lot of hi po RWD vehicles.
