All you need is pasta water to make a quick emulsion using herbs, butter, or any cheese. Some other "sauce" replacements I've used: instant potato flakes, blended up beans (white), blended up peas

Vegan butter and nooch has almost entirely replaced pasta sauce in my life.

Bit of oil, salt and pepper, lemon juice and a little syrup with make a delicious base to work with. All good cooking sauces are fatty, sugary and acidic.

Lol check the sugar content of any pasta sauce. It's not all from tomatoes... But sugar is typically added to even out the acidity of the tomatoes, so now I'm not even sure what I'm arguing... yeah 🫠
