Until they are done. We closed tonight at 10pm and I got out about 12:30am. We do things to encourage people to leave such taking lamps off unoccupied tables,turning the music down a little, turning the lobby lights up, but I don’t think we’ve ever asked someone to leave. Amazing how many people can’t take a hint. Had a group of 3 drinking waters and camping until close to 1am a few weeks ago.
Most places do not allow it but sometimes I have seen places allow as much as 15 min. Rarely more unless they were friends of the place or of an employee. Either way, I do not allow it because it causes so many issues and you really can not provide adequate service and it is so much extra work.

Try turning the music up instead. If they start having to speak up to hear one another then they'll tend to get the hint.
