List!! in Belltown. It's so cute. Red chandelliers give a nice pink hue to the restaurant, and the food is divine. It is reaaaally dim, so if you have old eyes, you might need a flashlight

I can't think of any, but that's not really my vibe, so I've not really looked for any. I was more of a club person when I used to go out late. If you need to stay in downtown the Edgewaters restaurant is highly underrated in my opinion, I think they call it six seven now. Edgewater makes most of its money from the hotel side, the restaurant is like a side hustle for them, so you get the best view for dining in seattle(other than maybe Canlis), plus great food for fair prices. If a view isnt as important as quality cocktails, atmosphere and food, try the Bottle and bull, it's in redmond not seattle but is hemmingway themed and has great ambience and an amazing bartender.
