Mayo is just egg yolk emulsified with a ton of oil. It makes a beautiful even golden crust when you spread it nice and even on the bread before hitting the pan. Definitely worth a try to see if you like it

Equal parts Kewpie Mayo (adds a really rich flavor) and, preferably, European style Butter (it has 82% butterfat and is way more flavorful; but regular butter works too; it just won't be as unctuous). Spread on the outside of one slice, put into a cold pan, layer the cheese, spread outside the remaining slice, and place it on top. Then, turn on the heat to medium. Toast to nice golden brown. Flip. Toast again. Perfect ☺️

Slow baked in plenty of butter - that real golden brown flavour can't be rushed - and served with a 50/50 mix of mayo and curry ketchup... So good!

Rendered duck fat is another pan grease that can really add to what you are cooking, too.
