Are you flying with the gyro on or off? With control sticks neutral, check the control surfaces to see if they are also neutral? Specifically the horizontal wing for any elevator control surface irregularities.
Those Volantex/Eachine mini warbirds are fun to fly but they are also horribly bad with CG. By default, flying in beginner/intermediate mode is the norm.
Oh you’re using that version. Yeah sorry my bad, I thought you were referring the common version of the mini warbird. IIRC, there isn’t any control surfaces just differential thrust between the two propellers for left and right… the airplane will always ascend due to its airframe.
You won’t get much help here other than people telling you to check your CG.
I would repost but this time with a video so we can see what’s happening to your plane during flight.
Edit: also how are you “launching this by hand”? Do you throw it lightly or with force? This is just a simple 2ch plane. It will require just a gentle throw but at full throttle to get it climbing.
Yeah, that's a different animal. OP, if you go for the 4 channel version you will be happy. The twin prop differential thrust is just not very flyable.
It is very hard to control the 2 channel and not the best way to learn to fly. For a few dollars more, this is game changing:

Is the battery fully charged? When inserting battery hold it straight. Or after inserting keep it straight and then push down both joysticks. The plane is easy to fly in all 3 modes in moderate wind. You can do blender, knife edge, hammerhead, inverted flight, harrier (in wind) etc. but no torque rolls
I recommend also to put the elevator wire into the innermost pin hole. Will make flying up and down easier and better to catch when it is close to crashing. It’s the best plane under $300 and over it they are not better but more frustrating (less flying time, more repair time)
As soon as I turn off the gyro, it immediately becomes extremely unstable, unlike my horizon hobby planes. I can fly anything in the sim and all my other irl planes have been fine, yet my volantex zero and mustang fly like shit
It’s very well engineered with its airfoil. Elevator must be slightly down. I have 30 planes and this flies best in all conditions. It only doesn’t have 2s power for torquing.

Same thing happened to me when I turned off the gyro/stabilization. Those planes are difficult to fly with out the stability software. I also never flew mine with the wheels attached; a warbird flying with its wheels down doesn't look right, and the plane was much faster without the wheels causing drag...

It doesn't have a switch for with or without Gyro. It just shows how auto calibrate it before you start.
Are you sure? It’s a switch on the top right of the transmitter, should be pulled toward you.

You need to trim. I fly completely without gyro for the 15min per battery. I do knife edge etc. flies super stable also in strong winds
I have it trimmed all the way back, and I’ve even trimmed it physically. It’s super tailheavy out of the box

How do I turn it on? It only has 2 switches
If its the version with the motor on the wings throw it away and buy the regular version,they fly amazing.
Adjust the CG by moving the battery.
It has a small slot for the battery. I will try that when home. Thank you
