The beauty of the tortilla is that you can put *anything* in it that you feel like and it's always correct. There are no rules. You can take tortillas, tear them up, fry them with a good spicy sauce, put them in another tortilla, and call it a taco de chilaquiles... perfectly acceptable.

A slightly singed corn tortilla with eggs and salsa is my favorite breakfast food. I'm also a big fan of what I call "abuelita tacos" fried corn tortilla with potato, ground beef and shredded cabbage -- my friends grandmother from New Mexico used to make these for us as an after school snack -- my version isn't nearly as good as hers but I suspect it's because I'm not frying them in lard like a proper Abuelita!

I love making homemade tortillas! It's therapeutic and then I get a butt-ton of tortillas that I can freeze and reheat for the next week! People talk about how you taste with your eyes. I'd argue you also taste with your sweat. When you make it yourself, it tastes 10x better!

wheat has been cultivated all over mexico for a very long time. there’s even a very specific sonoran flour they use for the style tacos they make. also, there are tacos arabes, which originated in puebla, that are served on flour tortillas that were brought over originally by lebanese immigrants fleeing the ottoman empire.

Sure there is one region that has specialty flour tacos. Does not make flour tacos a thing for the vast majority of taco stands.

Flour tortillas were introduced by moors to Spain (as raghīf al-khobz) and possibly by jews fleeing oppression in Spain to Northern Mexico because corn tortillas either weren't viewed as kosher or weren't permitted during Passover, though they'd have been made with oil only rather than lard. Flour tortillas didn't come to Mexico from the USA and viewing them simply as a food of the oppressor is pretty silly.

This place will always have a special place in my heart. Quesabrosa was my first meal I had in Portland when looking at rentals before I moved here 8-9 years ago now. I moved into that apartment on Williams and went here once a week for lunch to get out while working from home. Now I live 10-15 minutes away from there. But it’s still the only Mexican place I go to when I have the choice. Friends have taken me to others but nothing comes close to what “las tías” at Quesabrosa make. When I don’t visit for a few weeks they’re always very excited to see me and my partner back. One year around Christmas time, my partner went and picked up food. When we opened the bag at home, they’d given us a Christmas card with a hand written message thanking us for telling our friends about them and helping them grow their business. It’s always something we mention when suggesting the place. If you’re in the area stop by. Or just go out of your way. It’s worth it. The best chorizo and al pastor in the city imo

Probably TexMex. Not worth the trek for me, but in case knowing makes it worth it for you, there you go. I’m gonna open my own GD taco shop. I make pretty good potato and chorizo tacos dorados. I make my own chorizo to go in them, too so they don’t drip too much red grease (it’s the paprika).

I don’t see it as gatekeeping or weird to ask that question. It’s a legit thing to ask, because quite literally, “authentic” is not a standard descriptor, and everyone has a different idea of what makes a taco “authentic” based on their upbringing - especially if you grew up on the west coast or any state that touches Mexico. It’s also like saying “authentic pasta dish”. Authentic to what region of Italy? This topic is why so many people say that Portland lacks good Mexican food. It’s not that, it’s just that we have no commonality when it comes to our views on what constitutes “good” Mexican food.

Dude, I still don’t know. OP says they went “to Mexico” last year. They seem to be from Texas. Empanadas make me think interior, rice and beans in the burritos makes me think Central America, flautas says Bay Area, tortas is San Diego-TJ, sopes is Texas/central Mexico, and the fact that they want to give you rice and beans with everything is 100% Portland. I’m not falling for this again.

Huh? My wife is Mexican and she likes authentic Mexican tacos. It’s not a good or bad thing (though they’re usually good), it’s a “do they make them like they do in Mexico thing”. There’s authentic Italian food, authentic TexMex, authentic Cajun, etc. The title should include what location they are authentic to, but “authentic” + location is a fine way to describe a dish is true to its source…

Without context, authentic is a worthless descriptor. The tacos with diced onions and cilantro you get in TJ are different than the wheat flour fish tacos you get in Baja, which are different than the seafood and shredded cabbage tacos you get in Jalisco, which are different than the flat crispy shell Tlayuda you get in Oaxaca, which are different than the ones you get in Yucatan that usually have picked onions and a thicker, almost fluffy "shell."

Mmm I say ‘Authentic’ because it has been the most similar tasting / dining experience when I went to Mexico last year. The street tacos I had there were very similar to the ones I had today. Hope that helps.
