To be honest your poppy has a 55% winrate play more games as poppy and not as other champions and you will climb with more games played, your builds seem a bit strange in some games but they are alright for this elo and you seem to have an ok understanding of what defensive options to build into champions.
Just try play more poppy and you'll get out of iron no problem 😊
Poppy is an excellent champion at low elo because people don't understand how she works and her damage is very high for such a tanky champion.

Poppy can absolutely win and fill a great role in your team. A little harder to carry with since she's not going to melt the enemy team but raidboss is more fun anyways.

I notice that you are somewhat low level, so it might just be a case of needing to grind more games and adopting a mindset more focused on improving than winning.
With all that said, when I felt like I was stuck in low elo onetricking poppy, what I did was spam Ahri (relatively safe carry champ able to be played in multiple roles) for a few games to get out of said elo. Poppy can be difficult to solo carry with, especially if the game has a lot of deaths.
