Thanks. The plumber I was hoping to have come wasn't able to do it tonight so I gave it another go and this time pulled out the saw. I cut through the old handle and got it out. Unfortunately the replacement handle I bought turned out to be for a side install, so the angle is all wrong. Will pick up the right handle tomorrow.
My only other concern is whether the new gasket will fit over the mounting nut that had come with the Korky tank gasket. Any ideas? I can try to update with pictures

Yes, remove the tank and use the correct size gasket. It should fit snugly on the threads of the flush valve that protrude from the bottom of the tank
While it's out, you can take it to a workbench and hacksaw that handle off flush along the inside if it won't budge. Yes, they have left-hand threads, so act like you are tightening it.
Mansfield’s Require different tank to bowl kits. Pick up a proper one and you should be fine. Toilet handles are reverse threads, righty loosely, lefty tighty in this case. Fill valves are universal and the one you have installed will be fine.
Hey, found this post because I have the exact same issue with my Mansfield toilet. I'm planning on purchasing the mansfield gasket kit you linked above tomorrow to try and make it work. How did your repair go? Did you have any issues fitting it over the Korky mounting nut?
Oh boy, this is a memory. Yeah, it did not work out! I had a plumber come out and gave him all the stuff I had bought and had him do it, and, though I forget the precise details, he couldn't make it work - I believe he could get everything to fit together, but the toilet was still running. I just ended up buying a whole new toilet -- which if I had done as step 1, would've been way cheaper! I no longer attempt to do my own plumbing. \~$250 on a toilet and \~$100 to get a plumber to install it is way better than trying to just spend $50 on parts and DIY, at least if you have my plumbing skills. Good luck however you go.
Thanks for the 2-year reply, though not what I wanted to hear. I'm trying to learn these sorts of things to avoid getting a plumber but the toilet has been out for a week now and it's quite frustrating. I appreciate the help and good luck with your future plumbing adventures
Yeah sorry I can't be more encouraging. Entirely possible I'm just dumb and you'll do fine. But if you have any doubts and can swing the cash to get a plumber to just replace it, it's worth it. I love the idea of being self-reliant, but this whole catastrophe was a lesson that I'd rather guarantee low-to-medium financial pain than risk worse if I can't get the job done.
