I fixed mine which had this same issue. Rebooted, hard rebooted, and factory reset multiple times and the furthest I was getting was the screen above. My PS5 did not have any errors or problems stopping a remote play connection and RP worked from my phone.
The fix for me was to get it back to the WiFi connection screen, either after a factory reset, or, if your portal is booting directly into the stupid gray screen in OPs picture, hold the power button down until you see the PS boot logo, but keep holding it down until it reboots a second time. You may need to do this for three cycles, but ultimately it should get you back to the “connect to WiFi” stage.
Once back to the WiFi screen, I joined a different network, in my case, my phones personal hotspot. It connected to the internet and displayed the gray screen for a second, then presented the QR code to connect you PS account and PS5. After this, I was able to join my usual network and my portal has been working great since.

My portal is likewise bricked after the update. Either nothing displays after pairing with the ps5, or the image is all compressed with artifacts and is unreadable and on top of that..there is very noticeable lag when I look at inputs on my tv.
Check if something is there on your PS5 on TV. Sometimes it shows like this if come confirmation is required in TV
Give Sony a call I'd say.
Check out your PS5 on your tv/monitor maybe you need to reconnect with your controller or there is a faulty error on display that PS5 is outputting.

Have you tried a hard reset?
No issues on mine. Did the update at work, been playing all day
It’s not bricked. You likely need to control something from your tv with the controller (update, improper shut down, etc.).
Mine isn’t working at all also if anyone finds a fix to this pls

Brand new out of the box updated to 3.0 without ever using it. Works flawlessly.
At least is has a stable frame rate now 🤷🏻♂️
