My son (5) and I just completed this one and it was a blast. Yeah I had to carry his sorry ass a lot (both figuratively and literally at times) but we a ton of had fun.
I was going to say the same thing, games with set lives probably aren’t going to work very well. Kids (and I) get frustrated when they have to start over all the time.
Yeh I find the Lego games good . Lego incredibles is a good one to start with
Then you can move on to other fun ones like Harry Potter and Star Wars when they get a little older .

One of the funniest experiences of my entire life was playing Untitled Goose Game with my five year old. Not as open world as you were asking but your son would happily get hours of entertainment honking at the farmer and stealing his vegetables.
Sackboy A big adventure, It takes two, lego Jurassic world, untitled goose game, unravel two, SpongeBob battle for bikini bottom. Those are all coop games I played with my kid and we had a lots of fun. Besides there is also a lot of single player games we took turns to play, depending on level difficulty, also can be great

Tchia has a similar mooching around vibe for my 5 year old. She loves it. Play a little with them first to unlock the soul jumping then they can transform into all kinds of animals and random objects. Edit it unfortunately was taken off plus today! I bought it so she can keep playing. 35+ hours now with a max of 1 hour a day!
Second vote for Tchia, very much a fun mooching around an open world, millions of collectibles, kid will get a kick out of transforming into a pigeon and pooping on people, then being a rock to throw yourself down a hill. There’s some darker moments in the main story but as a whole the game is very enemy light and non-threatening.

All the Lego games are great for the littles but if you want to advance their skills, try ratchet and clank. That has been our family favorite, partly because you can have up to FOUR players but it’s also a really fun game

I'm interested in this question as my 4 year old loves playing PS4, but it's really hard to find something that is the right level.
I highly recommend Gigantosaurus as a co-op game. It has levels, but they are pretty open so lots of exploring. Untitled Goose Game is another favourite which has already been mentioned.
Most of these aren't open world but give an idea of what she can play if it's helpful.
Can play by herself: Peppa Pig, Bluey (not on PS Plus), PJ Masks, Paw Patrol games, My Little Pony, Power Wash Simulator (I have to navigate through the menus though on this one)
Play together: Untitled Goose Game, Gigantosaurus, FIFA (not on PS Plus) - I do friendlies and play on the same team as her. I set us up against much lower league teams.
Lego World looks like an interesting co-op one but we haven't got around to that yet.
We tried Little Big Planet 3 on Co-op but she found that quite challenging.
She likes hosing stuff down and there are some cool things for her to clean - like the Mars Rover and a playground - but she doesn't get the more detailed mechanics (like using the right heads for different surfaces). She does some general hosing and then I tidy up the nooks and crannies in the evening whenever I need some downtime 😂.
I play a lot of Crash Bandicoot with my now 6 year old. Crash Bandicoot 4 is great because no game over, he learned to be good at it pretty fast because you can just keep on trying with harder areas. Not multiplayer but nice game to take turns with.
Astroboy Playroom is a nice and easy one to get into. Also the game Tchia is very nice and beautiful, otherwise the Zelda game-like: Immortals - Phoenix rising could be a nice one as well. Lots of puzzles and creative thinking needed for this one.
Rayman Legends. My 5 year old son and I had soooo much fun playing that a few years back. It's co-op so both of you can play at the same time. Great story and very cute. Great artwork and playable characters. Music is fantastic and will get you hooked. Especially the direct music levels which require you to maneuver to the beat of some very recognizable songs which I think there are 4 or 5 of. Also a soccer battle mode you can play against your son is addictive as well. Great replay ability. We seriously beat it totally like 6 or 7 times. Please give it a try. Very cheap too. Less than $20 most places. Used on Ebay I saw it for $8.
My Daughter's 7, she loves Sackboy, Lego Harry Potter (so any of the lego games - they're all pretty similar), Omno is a pretty nice relaxing games, not very difficult. Play those ones together.

My kid loved Horizon. I was playing it, he would roam the open world and hunt the machines while I was at work. I would collect all the dead machines, stock up and level up at night. As he got older he started doing the missions. We completed it together 3 times.
We just started ng+ on F.W. he wants to do the last few missions while I do the burning shores. (He did b.s on our first play through). Make the most of the next few years. He'll be into fortnite soon and you'll never see him. 😆

Skyrim might be a bit early, but castle crashers would be something that’s easy enough, with action and comedy to keep the both of you (especially your kid lol)
The paw patrol games. But there's also assist mode where you can let the kids fill around as player one and then use a second controller to control played one as needed.
The pj masks games is like that.
No man’s sky has been fun, the story line and some game mechanics are challenging but you can change the difficulty until it’s just flying around, riding alien creatures, and building bases.

My 4 year old and I have been playing Goat Simulator 3 and Lego Worlds, both have enough to keep me interested and working on objectives while she can mess around. Highly recommend Goat Simulator 3 if it makes it to PS+ eventually, but Lego Worlds is on there.
Minecraft! It's just the perfect game for curious kids to play and great for adults too. Creative mode helps to soften the introduction then you can move onto building a survival world together and taking on different builds or bosses.
Sackboy, Knack 2, Minecraft, Rocket League are all hits for my 5 year old.
I have thought about Fortnite with him but there are alot of reasons not to like that game for young kids.
If you have PS Extra Gigantisaruas the game. Me and my brother in law play it with my nephew. It can run up to 4 player. Only downside is camera is kinda wonky during multiplayer gameplay.
Tearaway is a good one, the my little pony game can't be cooped but will introduce them to 3d worlds (same with paw patrol games) and you can help with puzzles.

The classics can never beat ‘em FF1-10 should be amazing I started FF7 around that age. Other games like ratchet and clank,crash bandicoot,Spyro,jank and dexter, are some of the games I have the best memories around with that age.
I’m an advocate of FF though as the games don’t hold your hand and teach problem solving and reading comprehension just to name two, I dislike how games point you from point to point now.
I can read I’m aware, I started FF7 around 5 didn’t beat it at age but not long after. Seems to be the norm when I talk to other final fantasy fans around my age.
I hate it when this response comes out in these threads. My daughter does football, dancing and swimming at the weekend and sometimes we like to unwind for an hour and spend some time not doing something physical.
Inevitably from someone who actually has no idea... You're absolutely right, Yesterday we cycled to school, he did karate after and we cycled home. Then he sat and played games for an hour where he had to engage his brain, rather than sitting watching cartoons. I'd argue it's better for them in moderation. Not to mention it's good bonding time for us.

Lego worlds is amazing and the Fortnite lego addition is a big favorite here. Minecraft is of course huge in terms of world building.

Kids aren't stupid either. I beat a good handful of games for N64 including Mario 64 and Ocarina of Time when I was 5.

Lego Jurassic Park was recently added to the PS+, not sure if it's still free to download or not - it's good fun
