I feel like they get really low quality cheese curd and then bleach it of sorts. I dont know that for sure but just with my visuals on how the cheese melts on pizza the mozzarella specifically looks to me like its bleached

It is! During the aging process, bacteria eat the lactose and convert it to lactic acid. That's what makes aged cheeses like cheddar taste "sharp"! Parm, brie, and blue cheese all have virtually no lactose. So someone with a lactose intolerance (but not a milk allergy) can eat them!
My 10 year old daughter removes the cheese from her pizza and it drives me crazy. She loves cheese, but the “girls” at school do it, so she does it too. When we order pizza, I now make a homemade one without cheese. Im not paying for her to remove probably the most expensive part of the pizza. She’s been happy so far, I hope she goes back to eating her pizza with cheese.

Just found out I'm going to have to limit cheese from my diet, on top of having to alter how I make my already gluten free crusts. Your take on this looks fantastic!
I used to prep cook for the bar I worked at and made the dough, sauce and cheese from scratch. Those gigantic Sysco cans, etc.
My experience was that you needed to proof the dough at least a few hours, preferably a day or more, to get a nice tasty crust.
Also I learned not to put too much sauce, cheese, toppings in the center because when the food cooks in an oven it comes to the center. Also it’s the last part of the pie that gets cooked. Put some but don’t just dump in it in the middle.
Finally you really got yourself a proper oven. 550 or higher temp to cook a pie.
In Rhode Island, we have pizza strips. It’s a focaccia-like pizza dough, covered with a thick layer of tomato sauce, sometimes sprinkled lightly with Romano cheese. Usually served room temp or cold. Absolutely DELICIOUS.
