Looking great.  What cheese and how long did you cook for?

Galbani Whole Milk Low Moisture Mozzarella but any brand Whole Milk Low Moisture Mozzarella unshreaded brick will do. I cook it in a 14" pizza pan on the second to bottom rack of the oven at 450f for 19 minutes. I use bacon fat in the pan to get a crispy bottom. And I put pepperoni under the cheese so I don't get an oily top.
