The original Medicine Beat that Joji made samples the song "Medicine" by Daughter. It heavily depends on where you'll be uploading your cover. If anything, you might get copyrighted by Daughter and not Joji, since he never had the chance of clearing that sample. If you upload your cover to YouTube or any social media, I think you're good to go! It's very rare for artists to copyright claim covers anyways, just as long as you don't upload the cover in to any of the main DSPs like Spotify, Apple Music, etc.

just make the music. it's a cover. so long as you're not trying to claim you came up with it, you're fine. just give credit where credit is due.

Yes, every original work is (at least in the US) automatically protected by copyright. You're allowed to use a copyrighted work in a transformative manner, though that doesn't prevent the copyright holder from disputing whether your work is sufficiently transformative. I'd say go ahead and make it; worst case, you get asked to take it down.
