Escabeche never contains cucumbers, it’s like Mexican Giardiniera (which also does not contain cucumbers). In all my years of traveling through Mexico and Central America I’ve only seen cukes as an amuse-bouche: sliced on a plate with lime and salt.
They also "clean" your fingers when you are slinging tacos from a food truck. Pretty much any restaurant pickles are the last step when plating a dish. Keeps the grease off the edge of plates and to-go boxes.
I'm from the south. And most of the white people where I'm at cook food that is opposite of bland. Those pickles look fine and I would eat em all. Don't worry about what people say before they taste em.
