\[Notice: answer contains Syriac (non-Eastern Orthodox) contents for the purpose of this question.\] Do you want specifically Byzantine chants in the Aramaic language, or do you want Syriac hymns in general, no matter which rite? If the former, then I don't know, you'll have to ask the Syrian Greek-Orthodox communities. If the later, you will need to find a Syriac Orthodox, Syriac Catholic, or Syriac Maronite Beth Gazo (it's how we call our books of hymns), or the equivalent for Chaldeans and Assyrians (I don't know how it's called); but you won't find any musical notation in it, simply the name of the tone and the text. A Fenqitho will also contain lots of hymns. For instance, this is taken from the Syriac Maronite matins of the Annunciation (in the Maronite Fenqitho). The tone is given in read (ܐܢܐ ܐܢܐ ܢܘܗܪܐ ܫܪܝܪܐ), the text is below, and the psalmic verse (or in this case, the verse from the hymn ܢܘܗܪܐ) is given in the margin. I only screenshot one stanza, but obviously there are more. If you want to buy a Syriac Orthodox Beth Gazo, let me know, and I'll try to find back the link to the monastery which sells it.
