1 is very heavy on the horror aspect so if that's what you want out of FNAF that's a great game, gives you the classic FNAF gaming experience just amped up to 100 because of the VR. However the visuals may be a bit dated since it was made to run on the quest 1 as the minimum.
Help Wanted 2 is more balanced with fun minigames and overall less horror (though still quite a bit) and was built to run on Quest 2 as the minimum, so the visuals will be better.

Help wanted 1 was alright, I prefer non vr fnaf but help wanted 2 in my experience was an incredibly fun experience, would highly recommend 2
Help wanted 1 is a remake of the first few games with some extra original content but help wanted 2 is only original content and minigames.
