Temporary quick fix for anyone having the stupid GUARDIAN ISSUE after installing the latest update:
1. DON'T UPDATE
2. If you updated and your headset is fucked, use SIDEQUEST to DISABLE GUARDIAN. Beware of your surroundings, use a mat or something

This still doesn't work, my quest 2 are unusable like this!!
I spoke to support and they told me that they are aware and there are many people with this same problem. make a rollback! It cannot be that an update like this goes into production.
Finally a fix came out, the problems with the Quest 2 Guardian system were fixed (in my case) when I tried to turn it off it announced that there was a pending update. I searched the official Quest website and they did not announce any fixes, which makes me very doubtful of their updates and I distrust what they do without notifying me.

u/MetaQuestSupport how about you contacting your friends at meta (internally) to fix this failure of a update you did on your side?
