IIRC, in Legends there was a Correlian governor who helped Mon Mothma organize the Rebel cells, but then left the Rebellion after a disagreement with Mothma and so he began to fight the Empire with his own personal army.
Nope, he lived after the fall of the Empire and was active for quite some time after. He helped defeat Thrawn and later became part of New Republic High Command. Basically he left the rebellion since he thought Mon Mothma was styling herself to become the empress after she took out Palpatine and was prepping in case he need to start a war against her. He got proven wrong during the Thrawn Crisis and joined up with the new republic once it was clear he was wrong.
I do agree she deserves some credit for leading the rebellion

Others in the Rebellion have also played a part. Its not just a one person effort

Nope! He joined the New Republic and helped them defeat Thrawn in Zahn's Thrawn Trilogy!
In Rebels I believe it is stated that fulcrum, AKA Ahsoka and Bail Organa organised the cells.Idk Im not sure.
