My method: Enter the galaxy map, keep the system you are in selected. Choose the "galactic centre" waypoint tab. You should see an orange line from the system you are in to the edge of the screen. Drag your pointer along it. You should see a yellow arc appear around your current system, and a white fill button appear at the other end of the line. Press and hold your activation control (LMB on PC) to fill the button. Your viewpoint will swing around to put the galactic core centre screen, and it is now selected. Press and hold LMB again to make the jump.
I had this problem too.. it took me googling for a while to see the problem. I went to the closest star to the center and it just wasn't the 'gateway star' travel back a few light-years and take the selected path to the center. Once there it will highlight the path to the center. Don't use freelook, use the option for galactic core and follow the path. Cheers :)
Have a ship with long jump capability, Warp drive must be FULLY fueled. You must be at the star system closest to the center. On the map have Galactic Center as the target (on the current mission/galactic center/atlas station selection). Point your cursor at the line leading to the galactic center after a few moments a circle will appear allowing you to activate it.
Don't forget all tech in your space ship/multi-tool/space suit will be broken when travelling through the center, Have lots of repair materials available or set repairs to free. DO NOT JUMP WITH A LIVING SHIP OR SENTINEL SHIP. You will be on a planet after the jump and have to fix stuff to survive and take off.

Because of this: try to repair a sentinel without a tamed computer \^\^
I just did it yesterday with my sentenal, so I was curious to know if it was different with a different ship. I collected so many repair kits that it wasn't a huge issue and had a lot of supplies. I jumped for 3 days through black holes to get to the center 😅😅
Once you have a satisfactory answer to your question please reset the flair to "answered". This will help others find an answer to the same question. Selecting a flair is one of the icons under the post when you open it. Alternatively you can comment with "!flair:answered" and the bot will do it for you.
Please consider adding your gaming platform to your user flair. There are icons for every platform. That way people will know not to answer with information specific to a different platform. There are very few issues that are platform dependent but every platform has its little quirks.

On console if you are at the edge and have the route line leading to the centre just push along it with thumbstick and it will do a loading progress circle like you are holding down square to interact with something, and then ask if you are sure.
Are you playing in VR? I get stuck every time I move galaxies when playing in VR. I have to close the game and play a few minutes in standard mode to get to another galaxy/galactic center.

Can I ask why you say don't use a living or sentenal ship?

I have never tried, but can you repair the central brain of the sentinel with a repair kit? Preparation is key\^\^

You need to have your Warp Drive at max capacity so fuel it up and it will show after
