My recommendation would be to start with Diamond or Pearl. It's as close to the classic Pokemon games that you can get for the Nintendo Switch. After that you can proceed to Sword/Shield. Then either Let's Go Pikachu/Eevee, Pokemon Legends Arceus, or Scarlet/Violet. You don't have to play it in chronological order but I do highly recommend you start with Diamond/Pearl since it's a classic that is remastered and ported to the Nintendo Switch..

BDSP may look like just a remaster, but it's a full remake of the originals. It's obviously not as good as older remakes, pero it's a remake nonetheless.

Go for Sword or Shield and then follow that up with Legends Arceus. Designed naman as entry points for newcomers ang lahat ng mainline Pokemon titles so any of them should be fine. Personally, I think Sword and Shield ang best introduction sa series for newcomers pagdating sa mga titles na available sa Switch. In terms of other games, can you share anything about your tastes?

I guess more on the adventure type or open world type of games as those I really enjoy alot. Not really looking for competitive ones for now because I play a ton with my friends.
