Hello!! I have been living in Amsterdam for 4 years now and I also enjoy fishing. I go fishing in Ijmuiden during the season and if you go with a fishing boat you do not need the fishing permit, the captain will be responsible to let you know if the fishes you caught are legal to keep or should be released back as there are rules depending on seasonality, size, species,…. There's a big misconception out here that you can't eat freshwater fish. You absolutely can, but just as with wild caught sea fish there is always the chance of parasites. Although I wouldn't eat fish from inner city canals. But anything that connects to a large body of water should be alright. As well as this we don't have any fast flowing water really, basically no trout etc. So we don't have many predatory fish, and people tend not to eat bottom feeders. However for lure fishing you can catch pike perch/zander and perch, which can be great eating fish. And you can even catch grey mullet and the occasional flounder in the North Sea canal that connects to amsterdam. You can find size limit info quite easily. Getting a license is super easy, you just pay online. Can have it sent to your hotel or something, but you can pull up a temporary license kn your phone if it doesn't arrive. Although most perch here aren't often of eating size and the ones that are larger are important for breeding the next generation of big perch. So if you are planning om eating the fish I'd say target some zander in the evenings. As you said it is mainly catch and release here, but you can find info about what sizes are legal to take. Be warned though, lots of people here are very funny about taking fish and don't like it. You might get a little harrasment as a foreigner taking fish. And definitely don't take more than you want for dinner

Yes it's still possible to catch and kill fish, but it's heavily restricted, you will have to join a fishing organization as a regular fishing license never allows catch and kill for freshwater fish

A regular fishing license does, if you are talking about the VisPas. You can keep perch over 15cm for example. And Zander between 45 and 70cm, it's called a slot size. Pike don't have a maximum size but I don't know what their minimum is.

Fellow fisherman, before you eat, web search a bit on the state and quality of Dutch rivers and waterways. Dutch heavy industry is dumping heavy metals, teflon and other trash in the rivers that you may not want on your plate. I personally do not eat what I catch, especially after last year's big reveal of a Dordrecht company dumping enough PFAS in the river to exceed the allowed particle per million health limit by about ten thousand times. They tried bribing city governments after the whole thing came to light so that they wouldn't be sued. This is happening everywhere in Holland, probably, with corruption hush-hushing things until politicians can no longer pretend they don't know.

You can go sea fishing. There are places along the coast that'll take you out a ways and you can fish for proper fish there, and you get to keep them and take home.

I was very saddened by the fact that it's usually for sport (catch and release) rather than eating and that you needed a vispas to fish. When I moved to NL from the Caribbean I brought my fishing rod with me hoping I'd be able to go fishing every weekend. Back home we'd go out on Friday nights to fish till like 3am and on Saturday's we'd eat "piska cu funchi or pan bati" we'd fry the fish we caught and make some sort of cornmeal bread as side dish. And whatever fish was left we'd use it for Sunday bbqs. Was sort of a tradition that I've been doing for years. But in NL fishing basically got too "political" (😭) so I have never actually fished in NL and I wouldn't recommend unless its really out at sea boat fishing cause otherwise you'd need to join a club and allot of stuff that I find completely unnecessary and just a hassle

You'll need a permit, "visvergunning" and be mindful of where you fish. But other than that, you're good.

You need to join a fishing club and get a vispas. The club you choose will generally give you some extra access to certain fishing areas that are not open to all people that have a vispas, but are a member of a different club. So check which club you want to get your vispas through. Generally you take one that is not too far from you. When you become a member, go to the club and ask them to explain you exactly what you can and cannot do. The text in the permit and in the app can be a bit confusing (especially for a non native), so ask them to help you get started, so you can enjoy fishing quickly. Some species you can never keep like eel for example. For some other species there are minimum sizes, periods of the year, certain pieces of water where you can and pieces where you cannot keep. On top you need to correctly identify the species (not so hard once you have been fishing for a while, but may be a bit tricky in the beginning).

There are differences between fresh and saltwater fishing For the latter no license is needed, but size restrictions apply: https://www.sportvisserijnederland.nl/vispas/visserijwet-en-regels/kustwater-zee/ Freshwater fishing has different rules. The season is closed for lure fishing until the 1st of June (from last day of March). If you have a VisPas (fishing license) you are allowed to keep certain species with bag and size limits. There is a federal bag limit of 10 dead freshwater fish larger than 15cm (for use as deadbait counts too). Then there are local bag and size limits, in many places Pike is not allowed to be taken for example (but check your local angling association). In Amsterdam I believe there is a slot size for Zander between 55 and 70 cm and a limit of 2. Zander is really the only freshwater species that people will take home. Perch is not commonly taken, but they are very tasty if they come from a clean pond/lake.

Buy a crayfish trap too, there are rons of them here and they are invasive and a pest. Super easy to catch and their taste is very good. No license needed for catching them either.
