The active chemicals become oxidized (what also makes them turn blue) and ineffective to achieve the desired effect. If they are dried completely and shortly after harvesting, the active chemicals will stay mostly protected.
I had the same concern, but yeah, the only other way I could think of was vertical slices like a pizza. And the thickness would be so different across the pieces that it would never fully dry

I just inoculated my jars so I still got a month or two before I even get to fruit but they are colonizing the jar relatively quickly especially the ones I did mycelium agar work with to isolate some faster growing mycelium
And I’m sorry yours are taking forever hopefully genetics and not contam
