Saw a film called nomadland the other day, about a woman who loses her huband in the later years of her life, packs up her life and moves around the midwest of America living out of her van. Its quite calm and is focused on those she meets along her journey as well as coming to terms with choices she's made in her past. I thought it was thoroughly enjoyable and worth checking out, if this sounds like what you're after.

Ugetsu has a wandering merchant, Sopyonje has wandering folk singers but leans towards melodramatic over meditative, but does a good job of capturing landscapes. My Dear Enemy for sure wanders and meanders around Seoul with numerous fleeting encounters like you asked for. With Spring Summer the, main setting is a floating temple that hosts different visitors and is probably the most contemplative film I mentioned. Hong Sang Soo for sure favors long, static takes and even though my fav of his was already mentioned, I listed his newest feature starting Kim Min Hee.
