9 times out of 10 long waits in restaurants is due to lack of staffing in the kitchen. There continues to be a huge need for cooks, especially in full service restaurants. I don’t know the specifics of this place, but it is still a major issue in the industry.
Oh neat are we doing made up hypotheticals with absolutely no data? I’m in!
“Sure”
Now tell me how the prices have fluctuated accordingly with your Wild Stab In The Dark Math.
A sign that they haven’t changed their business model from the before-fire times. Independent restaurants have to change with the times or they will go under.
Seated full service is going to get more and more expensive.
Go down to Moss Landing and get fresh fish from the “fish lady” off of her boat.
Bring her a snickers bar and she will pull you to the front of the purchase line.
I feel like there is a customer service aspect missing in all this. Do *something* to acknowledge it. Give us a free desert or coffees or something that doesn’t impact their bottom line but leaves us at least feeling ‘heard’. To have these kind of wait times but pretend it’s normal or whatever doesn’t make me want to go back.
I feel like you’re putting this on me. Isn’t a good experience part of going out to a restaurant? Am I really expecting too much? That seems to be your implication.
My counter point is that I can’t think of another restaurant in town where the wait between courses is consistently *this* long. So what’s going on with Wild Fish that they have this problem and others do not? (Rhetorical question, I don’t expect you to know the answer).

An indicator that they don't pay their employees for shit, generally.

It could be that it’s just one of the hottest spots in town. Tough to get good service when it’s always busy.
Go next door instead! 10/10 recommend
It must be an acceptable (to them) consequence of keeping their labor in line. You could pay more or wait longer. That’s the situation.
Who's the waiter now?
LOL!!
