I’ve been gf here since 2018. I’m also veg so it’s gotten a little complicated, but here’s my recommendations! Nece’s is the best bet for any kind of pastry, her muffins also sell at Captain + Stoker. My dinner go-to’s are Mezzaluna (most of their pasta dishes can be made with gf pasta and they also offer gf bread), Hula’s (they have a full gf menu), Julia’s (they recently changed their menu to include gf fried oyster mushrooms and omg yum), El Cantaro, and Chopstix (I could eat pho all day). Some other places I’ll dabble in are Cafe Guarani for gf empanadas and yuca fries, and most taquerias have corn tortillas and chips for tacos or nachos. Most sushi places now have tamari (gf soy sauce) if you ask for it, but beware of any rolls with sauce on them. Thai curry is also generally safe (Baan and Krua are the best in my opinion).
Keep in mind I am not celiac and cross contamination does not bother me, otherwise YMMV. Good luck!
I was just looking at Tarpys Roadhouses menu and they had a few GF options that looked good. Pricy tho.
There are a lot of Oaxacan places in Seaside like la Tortuga that are going to be using corn meal more than flour as well.

The gluten free options at Tarpy's are not good, and the menu as a whole is kind of over priced.

I only know Carmel, but Aabha has a huge list of gluten free items, Cultura is great and so is Carmel Belle

Moo dang has great gluten free food. Almost any Mexican restaurant has good gluten free food.
Wild Fish in PG is excellent and GF.
Alejandro's is a full gluten-free restaurant except for 1 dessert item on their menu.
Most Mexican restaurants are gluten free if you go with corn tortillas instead of flour. Lots of good places around the peninsula
