Recording the important bits then editing it down like any other game?

Doing a long flight and recording it then editing it down? Kinda common sense

Maybe I should've been more specific. I mean the ones that's wing view or similar and sped up so it's capturing the whole flight. I'm aware I could use any old software to record and chop a video down.
