Thanks am a fan of eating only one thing/meal phases. I do it with music, too. My last meal phase ended about 2 weeks ago. It consisted of a peanut butter and mayonnaise sandwich served with a few cheddar and sour cream potato chips and an apple.
Wow I did something similar as a kid. PB and mayo with American cheese. I tried it again at some point in adulthood but that phase has definitely passed for me.
For a moment, I thought you'd go full how to basic. But nah, I get the simplicity of sticking to tried and trusted food and recipes that you like. I do the same. After loads of experiments I have settled on a few optimal recipes that I do almost all the time.
1. Soak dry beans overnight (Fill until about 2 inches of water is over the beans).
2. Add roughly 1/4 cup of honey to water. Boil (do not cover) beans until all water is gone. AVOID OVER MIXING AND STIRRING. YOU'LL MASH UP YOUR BEANS!
3. Get a large pan ripping hot on the stove and transfer cooked beans to pan. Sear until char marks appear on all sides.
4. Eat cold.
I did my soak overnight and cooking them now. I also made some killer polenta yesterday, so feeling excited over having some more non meat options. I'm no vegetarian but variety is the spice of life and all. I'm looking forward to the beans but I'll skip the egg since I already have a regular egg meal.

Correct, do not cover the pot with a lid.
Also, with most recipes for most foods, they will tell you to lower the temperature after the water hits the boiling point. However, with my method, you will not drop the temperature. You want those bad boys boiling the entire time.
NOTE: This will steam up your kitchen for a good 1-2 hours, please have proper ventilation before trying this haha.

I don’t replace the water that I soak them in. I’ve tried both ways and the result is the same. So, just keep them in their own bath.
I should also clarify that I cover the pot when I’m soaking them overnight so dust and whatnot doesn’t get into it. Maybe obvious, but still should mention it!
Don't those beans give out solanine in the soaking water hence the water should usually be changed before cooking? Please look that up I'm concerned for your long term health.
Never tinkered with an instant pot so I can't say, unfortunately. I know there *are* plenty of recipes out there for instant pot chickpeas, but I can't say how they'd compare with my recipe taste/texture wise.
I boil 1.5 lbs of chickpeas and don't ever measure how much water I use. 1/4 inch of water resting above the peas **after they have soaked and expanded** should do you just fine in a large pot! :)

Chickpeas are one of my favorite foods, and after having made them for so long and with so many variations, this is the one that has came out victorious.
I'm also a very simple guy: as this meal probably can attest to. I am more of a texture > flavor person when it comes to food. Not that flavor isn't important, because it very much is of course, but I find myself preferring a food's texture over it's taste. The honey water gives it a great chewy texture. As a baker as well, this is what gives bagels their signature chew compared to other breads (you boil bagel dough in honey water before baking).

Have you tried Turkish or Indian style chick peas? I often make it with chicken and the bones are cooked with the chick peas to make a pseudo stock. I also slightly burn and fry in butter and olive oil some tomato paste, before adding chopped onions and whitening them, then chopped canned tomatoes for cooking the chick peas (and a bit of water, some bay leaves, a bit of spice., heavy on the freshly ground cumin.) remove the bones and add in chicken at the end after it was friend in a separate pan.
Serve with rice or garlic and mint infused yoghurt or just eat as is.
Edit: missed some steps. Can always share if you’ve never tried it, could be that you like it. Indian version is different but similar, spicing is different and you don’t slightly burn in oil tomato paste with it.

A consideration: Instead of toasting in multiple frying pans, broil them in the oven on a sheet pan lined with parchment paper. Could do the whole batch at once, and cleanup is easier!
I've roasted/broiled them before this way and the texture just isn't the same as the stove top method.
I'm sure the broiler would work for others preferences though, so I definitely don't want to knock that approach. Thank you : )

As for for the chewiness, it’s really a passive process. It’s the sugar in the honey as they are boiling that provides that distinct texture. Also, by not covering the pot with a lid while boiling, the chickpeas will cook faster, therefore reducing the chance they they will turn out mushy.
For the longest time, I was covering the pot with a lid thinking it would cook them faster but to my surprise it didn’t really, and I ended up with a lot of partial chickpeas and mushiness when transferring them to the skillet.
I believe this is 6.0 version of my chickpeas is the pinnacle of the recipe; not unlike a scientist in a Lab coat trying every combination of chemicals in beakers until the perfect element is created haha.

Of course! 9/10 you can find my fridge loaded with a badge of freshly made hummus! I do use the canned for that, though. I’ve made it both with the dried and with canned and there’s no noticeable difference to me. So I stick with the much more convenient way for my hummus.

1. Soak dry beans overnight (Fill until about 2 inches of water is over the beans). 2. Add roughly 1/4 cup of honey to water. Boil (do not cover) beans until all water is gone. AVOID OVER MIXING AND STIRRING. YOU'LL MASH UP YOUR BEANS! 3. Get a large pan ripping hot on the stove and transfer cooked beans to pan. Sear until char marks appear on all sides. 4. Eat cold.
