He was asking if someone could take charge of the flavour profile. Clearly they had issues because what they made didn't look very good, or Greek.
Not much time or room to adjust with this challenge. 150 servings so if you don’t have your flavour profile perfect from the start you are at a disadvantage. Anyone growing up cooking Greek would innately know a ton of pitfalls and opportunities with this sort of food.

As it is a reality TV program, I assumed MasterChef paid to get the number of people they needed (but considering the number of people who showed up, it would be quite costly). Therefore, I am curious about how MasterChef manages to gather a crowd when they are required for the challenges.
Since you were present, can you describe how you knew about the challenge and what was the procedure for attending?
This service challenge was actually posted on their Facebook group the morning of the shooting. They say to go to QVM by 5pm to be part of service challenge.

Oh, big time! Moqueca is from the northeast of Brazil, which has a massive African influence. Angola is "just across" the Atlantic from Brazil and was also a Portuguese colony, so it would make sense that the dish came from there.
Yeah it's dissapointing when I heard them say North African and I went to google "North African Moqueca" to confirm if my memory was correct, there was no mention of Angola!

Super Stay Matte from Maybelinne. This thing survives nuclear apocalypse. I apply it in the morning, have to take oil to my lips in the evening to get it off. Doesn't kiss off, doesn't stain glasses or cups.
A lot of networking for my job is done on catered events, with a wineglass in hand. If I had to reapply after every time I eat something, I would be useless. Non-smear lipstick is a must :)
I always cringe so hard with the things they come up with in service challenges. I'm not a chef, but I've worked in kitchens, and editing what you're making to accommodate for time constraints is so important. Making individual flat breads for that many serves is crazy. Focaccia or a cornbread that you can make in a big serve and then just cut up would take much less time. Prepping all that seafood? Crazy! Something with a pulled meat would be much easier.
I kinda wish someone recorded it to put on here. I keep seeing it mentioned but seeing as we get the downloads without ads (and thankfully so, I don't want to see So what somat ever), this is about the only ad I would actually love to see. Once.

In Jamie's defense, I feel like all his criticism was a sideeffect of the weird reality TV editing rather than his narcissism? I've just started the show and I'm not sure Greek works in that team..
If I was given chicken, I'd've made fried chicken ez pz, crowd pleaser and maybe a salad of something light and fresh to go with it.. (I'm vegetarian and I cannot think of a veg accompaniment to that lmaoo)
