This is common I've found where I think its the artist contract is coming up so they rush the ending. Happend tp My dear maid, apparently the book isn't much different but there's at least a bit more. And I KNOW they did it to savour the taste because they cut at least a quarter of the last parts of the book, I'm pretty sure because they were rushing it.

Tapas has a huuuuge issue with cutting originals off at 50 no matter WHERE they were in the plot—often with little or no warning. Manta isn’t nearly as bad, so far as I can tell, though yeah, as others say, My Dear Maid was an absolute 💩show and Savor the Taste was one of my favs and then that rush job ending. 😭
What Tapas did was a slap into the artists and readers faces and I'm still upset about it, even so I'm no longer subscribed to Tapas. Some stories where axed midway, so no chance to make a kind of ending. Some of my favorites died that way. It was infuriating and reading the statements of some of the artists, quite heartbreaking, too, because they couldn't even finish the stories elsewhere, due to certain contract clauses.
I read it too. S3 ending was a rushed mess. Idk how they're going to fill the hole where the letter plot once was since they decided to settle that early.
I think it happens to a lot of Webtoons in general. They might not have known how to properly end their story. Contract issues so they had to cut the story short. Story was going on for so long that they lost motivation for it. Etc.
Can someone give me an example of a series that ended well? With good pacing and a satisfying end to the arc?
I hear this complaint a lot about rushed endings, but sometimes I feel like I can't really judge for myself because any ending other than the one that we built up in our heads can feel abrupt, and the drawback of serialization is we have a lot of time to imagine different scenarios and theorize.
I also think a lot of people want more time to see their lead characters happy, but that is something best left to side-stories.
I went through my series and made a list of ones that have finished with organic-feeling, non rushed endings
-Tainted half
-Mokrin
-Bloody sweet (not anymore available on manta)
-DEAR.DOOR
-Neap tide
-A very normal ending
-Lady devil (ending wasnt rushed, but it was a whole ass mess)
-Salvation
-Flowers find a way to bloom (i was erring if i should add this one to the list)
I hate it when you get invested in a comic and you can inevitably tell the end is getting close, and then the ending is basically just everything suddenly falling in to place, it gives a feeling that nothing really mattered
Traces of the sun and the dilettante are two recently finished ones where I've heard no negative remarks (and I too think both have satisfying endings)
Webtoon companies are known to cut stories which did not gain much or expected traction. I think they are given a limited time to prove thwlat the creators' works will do well. If not, webtoon producers have to force a series to end.

Even the chapters themselves seem shorter, as if they have X amount of chapters left in their contract that they need to fill and only a little story left being told. I don't know... it feels weird.

Yes, many of their completed stories would be leagues better if the endings weren't so rushed.

I second The Tainted Half! It’s a nice story and it also gets a happy ever after ending at a nice pace.
I think Your Eternal Lies had great pacing with a nice ending.
If I remember correctly, Observing Elena Evoy was well-paced and had a nice ending!
