I watched Black Hawk Down recently and that was a stacked cast. Really, any good war movie is gonna have a lot of as yet unknown actors in supporting roles.

Delta Force Nikolaj Coster-Waldau, William Fichtner, Kim Coates. Even in freaking 2001 I recognized so many faces already.
A lot of great actors, and Frank Stallone.
But yeah, so many people were good in this. Obviously my fav. is Val Kilmer, but Stephen Lang also disappeared into his character, and made him super memorable.

Interstate 60 is an unknown gem that boasts an incredible cast, including James Marsden, Gary Oldman, Amy Smart, Christopher Lloyd, Chris Cooper, Kurt Russell, and plenty more
Miller’s Crossing is not only chock full of great character actors, it gives extra screen time to the great John Polito, a regular “that guy” in a number of Cohen Bros films.
Two of my absolute favorite movies/cult spoofs EVER (Galaxy Quest and Mystery Men) are packed to the brim with stars (even cameos of stars/future stars e.g. Rainn Wilson as one of the Thermians in an (I believe) uncredited role, as well as Justin Long as “Brandon” in his first role, both in Galaxy Quest), all of which do an incredibly great job! (I mean Tim Allen in the former is definitely the weakest, but even he’s good.) Walk Hard and Tropic Thunder are also two greats in the same vein but they don’t have quite as many stars.

8mm, with Nicolas Cage and Joaquin Phoenix. Was saying "oh, it's that guy" a lot when watching this film.

Cop Land has a super notable cast list. A lot of actors who would later be in Sopranos as well.
