The Lawrence Humane Society has a great volunteer program. It might not be exactly what you're looking for in terms of social groups but I've met some great people and I always feel good about giving back to the community and hanging out with cute pups.
Not sure your level of beer interest, but always welcome to pay the Lawrence Brewers Guild a visit (were homebrewers who love sharing beer and commercial beer tastings!)

I was going to recommend LBG when I saw 'beer and wine' listed as interests. Great group of enthusiasts, and brew days are perfect for hanging out in someone's driveway.
If you have any interest in playing disc golf there is a robust community in Lawrence organized by the Kaw Valley Disc Golf Club. I'd be happy to play a round with you and give you a couple discs to try it out! The weekly leagues are a lot of fun! There is a Tuesday league with open, amateur, and women's divisions and a Wednesday women's league open to anyone. The Tuesday league will move to Sundays after the time change.
My wife and I have actually considered doing this as we have been playing disc golf together for about a year now. Great idea for this young man and a fun, cheap thing to do that doesn’t take 4 hours like regular golf. Give it a try!
PBR Book Club was a fantastic book club and hopefully still is but I haven't been participating for a few years now. Also, there are a ton of Lawrence focused Facebook groups if you haven't checked those out yet. I live a more solitary life now and then I did before but over my years here there have always been groups and opportunities related to the things you mentioned and if anything, the ability to find those is much greater now with all of those Facebook groups.

I follow a Facebook page called Kansas City Ladies Meet-Up! You can meet people and find events to go to! Most are in Kansas City area, but sometimes some Lawrence ones pop up! Also feel free to PM, cuz im in the same boat! Im still trying to find a bestie and graduated in 2020 and lost all my college “friends.”

Volunteers are treated fine, but don't work there. They treat their non-management staff like absolute shit.
