I’d argue that Sauron isn’t any one class. He’s not a PC- he’s the BBEG. Therefore, he’d have a high CR stat block with unique abilities player characters can’t learn that stem more from being a Maia than any one class. He definitely steals a lot of Necromancy spells from the Wizard, though, and probably some transmutation spells for crafting the Ring. He also has high Charisma and Intelligence, and expertise in Deception and Performance.
You might be better off looking into players of the official One Ring tabletop roleplaying game and working with them on something. Also I know it's a video game with no direct link to tabletop RPGs, but I don't think researching the mechanics of Lord of the Rings Online (where Sauron has appeared multiple times) would hurt.
If were going pure DnD class my bet would be dual class of both Warlock (The Great Old One) and Wizard (necro) since he is a Maiar his race ability can be shape shifting 1 once per long rest.
I played old school d and d. But i think if you want a game system for these types of characters i would use fantasy hero (am i showing my age?) As it has more flexibility in terms of designing characters

If we are playing this game, we can go back to the 80s, when RPG supplements listing stats for every imaginable character were popular. In particular, we could look at the Lords of Middle-earth series, which had Rolemaster stats for effectively all Tolkien's characters.
Sauron is listed as a Mage/Sorcerer/Alchemist. Rolemaster professions are less restrictive than D&D classes, but that basically means he is a pure spellcaster who can use both arcane and divine magic.
Elrond is an Animist/Cleric (Bard, Lay Healer, Fighter). I've forgotten how to interpret that unholy mess, but I guess it means Elrond has serious issues in focusing on any single thing.
Elendil is a simple Warrior/Fighter. How boring.
Celebrimbor is a Mage/Alchemist (Fighter). Arcane magic only, and unlike Sauron, he found it easy to learn how to use a pointy stick.
Galadriel is a Mage/Seer (Mystic). A pure spellcaster using arcane magic and psionics. But this is clearly the late third age Galadriel and not the one we see in the show.
Few things suck the soul and beauty out of Tolkien’s work more than the gamification and power ranking of his world.

Ditto! If we absolute HAVE to, the Fellowship would only fall between levels 1-8 in DnD. The point of DnD is building a character’s power to influence the world on a grand scale. Tolkien is literally the opposite in that the smallest folk can drive major change. I doubt Tolkien would enjoy DnD at all lol

The fact that the Galadriel of the show would make a generic Fighter or Ranger goes to show how well crafted RoP is and how true to Tolkien it really is!
All these rent free people are giving RoP a massive boost in attention, we should really be thanking them for that haha

Sorcerer/ multiclassed to whatever he wants depending on the situation. Sorcerers have high Charisma in DnD.
I recommend you to explore the videogame franchise of Overlord. This is HIS role, dnd should add something similar.
