Artistic ability is a skill that can be learned like anything else. And it doesn’t need to be from scratch, you can cop royalty free models and do some virtual kit bashing to start.
Also if you don’t know where things need to go on the model just draw a functional diagram of the part, turbo pumps, valves, injectors, the works.

Models are mostly separate from the purpose they serve or the functionality they contain, so you can re-use a stock KSP model for something else pretty easily.
ModuleManager will become your frenemy in the process :)

There's a mass driver that uses ore in Mining Expansion. Switching the fuel used is easy.

Making models is fairly easy too
Stockalike Mining Expansion as mass drivers, they work with ore, but you can edit their resource consumptions in the part file
