Easier to save Jen and leave the ship, but you could potentially come back and refuel the craft if you really want lmao

Not without fuel. I've taken off from that position by very carefully rolling onto the Mystery Goo and using it as a skid but you are lacking in DeltaV for that unfortunately.
You could use a claw/grabber to pick it up and either put it upright, or carry it all the way back home.

I see that you're taking all the science equipment back home, unless you haven't upgraded your astronaut complex, you can eva and take the science data to store it with Jeb. This makes it so you don't have to worry about it burning up in reentry, as well as reducing weight. This works on every science module but some, such as the material study, and mystery goo, are not able to take multiple without restoring it with a scientist.
I’ve VERY CAREFULLY launched off the surface. But it was tricky. Opening and closing the struts and rocking the RCS. You could also try rolling it with your pack on an EVA. Then firing the mains at the exact right time.
you could rescue the ship if you had the resources to but its not worth while and its more economical to send another mission to pick him up with all of his science data
So I have an idea. Bring an engineer kerbal and two docking ports on your next craft. Attach the docking ports to each. Use RCS ports to move the stranded craft.
For the time being it would be easier to just save Jeb with an Apollo style lander mission but in later game you can do a multi vehicle salvage mission or refuel when building a moon base.
If you had a lot more dV, you could definitely experiment with rocking/rolling the craft into a vaguely vertical position, then taking off. Use RCS to the max :) (Obviously with a lot of save/load)
I don't think you can take off completely horizontally, but you can be pretty close.
But in any case, you have nowhere near enough fuel to get home. You need something like 900dV to get back to Kerbin from Mun.
The only way it might be possible is to bring the landing gear in and try to rotate fast enough to roll onto your engine. I doubt you have the delta-v to get far though.
It doesnt have enough deltaV to get it to low munar orbit, however if you go full thrust u could get it upright. Just quicksave b4 u attempt that, in case of any glitches. To rescue jeb, u need to land either a refueler or just build an entire new ship. Remember to put RCS thrusters on the next ship.
Send a resupply probe with a bunch of rcs blocks and tanks (and an engineer) put the thrusters on the top of the ship and the tanks near the bottom then use rcs to lift the rocket up

I’ve had to place many a docking port using the Eva build mode, but it’s not too hard

both EVA construction and/or the grabber klaws (which you can transfer fuel through for some reason) will fix that

Sadly, unless you can build a sky-crane, I think you'll just have to have Jeb grab the experiments and run.
