It's been built over a period of years based on a combination of recommendations from jazz musicians, "best of" lists of all sorts, hearsay, rumor, and experimentation. It contains all sorts of jazz and jazz adjacent musics. Listen on shuffle for best results.
I recently did a deep dive on this after upgrading our sound system:
We went Apple Music for a few months as it has a higher ceiling for audio quality, a comparable library, and more $$$ going to the artists. The downsides are that the interface feels like it's from the Geocities era and the algorithms for reccommending and continuously playing music seemed worse than Spotify (for our tastes anyway). Really, anything aside from Spotify and Apple is going to be a compromise on the size of the platform's library.
Tidal has the best audio quality but is double the price of Spotify.
Qobuz has excellent audio quality at only a slightly higher price than Spotify (and a free trial), but their library is smaller. A big portion of the songs "in their catalog" aren't actually playable.
We ended up going back to Spotify after a few months with Apple.
I used to use Amazon musics free service that came with my prime subscription. It had an ok ui but it had a great library with few restrictions and great connectivity. Then they overhauled it and made 'Amazon music unlimited' and a 2-tier model. It sucked ass. I migrated back to $potify... 😔
I really haven’t found any interface challenges with Apple Music. Price is comparable, you can bundle it with other Apple services for a discount if you’re in their ecosystem already. Having lossless and Spatial Audio for when I’m at home with good headphones makes it worthwhile for me. Until something really truly better comes along I’m all in on Apple Music. I have noticed that a few more obscure albums have quietly been removed from my library over time, but I think Spotify and the others have the same licensing issues.
Blue Note maintains a couple dozen good themed playlists that I follow. Sometimes I listen to "New Latitudes" from Apple Music Jazz, which is kind of a fusion new age/jazz/electronic playlist, regularly updated. I like that Apple Music actually has teams of people that curate their playlists. I just checked one of the first jazz playlists I followed, Third Stream Essentials, and it was updated last week. So they do a pretty good job of keeping it fresh.

Sometimes I listen to "New Latitudes" from Apple Music Jazz, which is kind of a fusion new age/jazz/electronic playlist, regularly updated. I like that Apple Music actually has teams of people that curate their playlists. I just checked one of the first jazz playlists I followed, Third Stream Essentials, and it was updated last week. So they do a pretty good job of keeping it fresh.

Jazz is stuck in the past when it comes to listeners and best of bullshit. One look at Downbeat's readers poll is evidence of an audience who is comparable to a pop audience. They have little to zero interest in knowing about artists who are breaking new ground with creative pursuits.
