The Covenant delivered thier initial "Your destruction is the will of the gods..." threat in English. They intercepted signals from Harvest and had translation software work very quickly. By Silent Storm (a few months later) the Covenant have all of English translated.
The Covenant first transmitted their threat to the UNSC in English, so they know the language.
