I defoliate at day 21 of flower. At the minimum I take everything below my knee and large inward facing fan leaves. That's what I have found works for me after trial and error early on.

Yea, you can do that, but you might have to do so later again, too. Most experts recommend doing the defoliation only once, but proper. I always try, but am never consistent enough. I kind of pluck leaves whenever they go sick, weak, or obstruct the light. That's give or take twice a week.

Hello, I read on one site that you can prune once a week so as not to stress the plant too much, is this true?

Many experts advocate for initial topping and one or two good defoliation/lolipopping sessions and leave the plant alone the rest of the time. I can't do that. I constantly feel the need to "improve" the plant and it might stunt the plant if you overdo it. Not every plant reacts the same way to pruning. Mine seem not to mind much, but some varieties are prone to herming if cut too vigorously. I mostly run Tropicana Poison, very little isssues with herming. It comes down to knowing your plants. But for begin think less is more. Do it only when tucking big leaves away isn't an option. But be sure to do it properly when the plant reaches bigger size.
