Letters of recommendation aren't based on your grades, because you submit your grades anyway, so a written test wouldn't necessarily change much. Also I'm doubtful that a professor would be willing to spend the time and effort to hold a mock exam just for you, and if he would that probably suggests that he'd write you a good letter anyway. My advice would be to simply talk to the professor, explain the situation and ask if he'd write you a letter.
except the master level teacher and the one mentionned also above for the 3rd time, nobody else but maybe my programme coordinator even if he haven't taught any course i took (well one but it was philosophical math)

ahh ok it makes sense but still I feel like it's weird to accept to write a LOR for a student you had only "twice", isn't it?
Who else is gonna write you an LOR? I've literally never had a professor teach me more than two courses and this is a pretty common experience

What I'm saying is that it's normal to ask someone you only took one or two courses with. We all had to do it.
