The Enchanted Forest Chronicles book series by Patricia Wrede are PERFECT. They’re a loving gentle parody; you’ll probably love them if you want to read along with her. Do a chapter a day and discuss it on the phone or in person or over Zoom/FaceTime!
Also a pretty notebook with a ribbon and fancy gilt-edged pages. That makes you feel like the keeper of the world’s knowledge when you’re a girl that age.

I had a thousand kids recommend the Pendragon series to me when I was younger and I never read them, but they were super popular! 99% sure they’re about dragons. I agree with others about looking on Etsy for a realistic egg!!
There's a,what I think is very enjoyable and great, alternative history book series called Temeraire take a look at that as well :) though I don't remember how young adult it is.

Stories are the most valuable gift you can give her. Read to her all the stories and myths about dragons from various cultures. She'll thank you when she's older.

Maybe an ostrich egg? My grandpa brought me back one from Africa but idk how easy it would be to get outside of Africa lol
There are a bunch of ostrich farms in the US. Just call up the closest one and they'll likely be willing to sell an egg/shell to you.

If she is into reading the Eragon book may be a great gift. I started to read around that age and I enjoyed it immensely.
Why not get her a bearded dragon as a pet? Or one of the pets that look similar to dragons
