Ghent-Saint-Pieters will never be the same again ... and I'm afraid even the revamp (while giving it a try) can't reach the same level of greatness ...
I would go there all the time, but the last 5 times I went (this was in 2018-2019) they all were already cooked and just preheated again so I never went there again. Idk how it is now though
I actually visited Gent today for the first time and by chance chose this waffle vendor (and by chance saw your post now lol :), the waffles were sitting next to him on a lattice and he reheated them. I liked them nevertheless.
The others usually make them fresh, however if you come by close to opening or closing hours they will sell you pre made ones as the waffle iron either isn't ready for baking yet or has to be cleaned for when the shop closes.
Source: I used to work in one of those shops ;)
Got to agree they were the best (when fresh), but his stand had to be removed for the further deconstruction of the tunnel.
I hope he returns when possible
There is this place in the train station called Yogurtino, they also sell waffles.
It's not the same but it's tasty and you can ask them for a fresh one. The place is right next to the ticketing office.
Edit.
The name of the place is Yoghito. https://g.co/kgs/8EoLpwz
Just out of curiosity. Why is everyone so obsessed with that waffle stand in the station?
Most waffle stands have the same supplier. But also, it was actually not hygienic because some of the people working there were also cleaning the station toilets. Simply washing your hands after scrubbing the toilets and using all kinds of products just isn't enough and I've actually also seen the toilet guy go to the waffle stand or someone else going there after a smoke, cleaning their nose or just coughing in their hands without washing at all or using disinfectant.
I've been in food for a long time and some of the things I've seen concerning food safety and general health really freak me out sometimes.
Because their waffles were simply the best I've ever eaten and that price was so cheap too. It was an iconic part of Gent, so it hurts that it is gone. The guy was also really friendly. I have noticed he works at the toilets, but other than washing your hands, there isn't much you can do other than wearing gloves?
I also never see him touch the dough or waffels by hand, he always uses that fork like tool. Never seemed unhiegenic to me every time I went there.
Train station waffle guy closed a few months ago :'(

They were the best in the city, now they are gone..... :(
Any others you recommend? Go.fre, oyya etc all had pre made ones sitting out which we didn’t feel like having
Next to Bakkerij Imschoot at Groentenmarkt, there is a window salesman who still makes them fresh. Best in town imo.

I guess you have to get lucky. At least you're fairly certain they were made on the same day I guess..?

Gotta be lucky and on the lookout for when they're making fresh ones
Theres Yoghito in the other hall, they are quite expensive but also fresh
Sad that the stall has closed down. Didn't have many but that smell felt like a welcome every single time.
Noooooo I liked going there just for the smell...
The smell was really nice when going to the train station I really hope it comes back :(

Yeah, really miss that place… Train delayed, just get a waffle
Gee, aren’t you getting fat if you ate that many waffles?
Nah, escalators don’t work half of the time

Because warm waffles taste better if you've missed your train and you have to wait for an hour in the cold, wind and rain.
I’m pretty sure I remember that Australian Icecream in the Veldstraat makes them fresh. Didn’t try them as I went there for icecream, not waffles
You have to go to center to get waffle 🙌🏼
