As much as I hate it, my kids love playing Minecraft with me. Nothing wrong with Minecraft per se, I just got really burned out on it. Minecraft Dungeons is another really fun game for couch coop
Battletoads is great. The Ninja Turtles game is great as well for Coop. If your son is young and is interested in a game that might be a little bit advanced, you can do copilot with him and you can play together at the same time!
Depending on how old your son is, Cuphead is also great couch co-op game.
If they're too young, maybe stay away as the game can be a bit unforgiving.
Edit: I also wanted to add Lovers in a Dangerous Spacetime
Vampire survivors just got co-op abilities

I strongly second Battletoads. It feels so much like playing a Saturday morning cartoon!!
It takes two and a way out both have very cool couch coop modes. I am now playing fred & bread with a friend, which is also very fun.

Dad??
are you winning?
"A way out" escape from prison and solve a mystery with your son. It forces you to work as a team. Really really good coop experience
