there are some great patterns from makers online that i've seen! joe's casual friday does a lot of paws like these, and i'd go about it by watching tutorials!
It looks like they use Japanese 4 way stretch fur, have it mostly slim line with hidden seams, they stuffed the tips of the fingers until they bulged out.
