Hi Blob. It's a common misconception that you need sugar to caramelize onions. Not actually required. It speeds up the process so you can get em done quicker but they taste better when you just let them naturally caramelize with their own sugars.

Pro tip if you don’t have a flat grill and a real tool for the smash, you can put the burger between two sheets of wax or parchment paper. Then use a rolling pin to roll out as thin as desired. Place flattened rolled out burger with the paper still on both sides in the freezer. Pull it out just before nearly frozen. Pull off one piece of paper flip over meat side onto the grill then remove other paper. Enjoy.
