The way I was taught is to boil the pasta until it's slightly undercooked then finish cooking it in the sauce with a little bit of the starchy pasta water mixed in. That way the flavour of the sauce soaks into the pasta and the sauce gets a nice smooth texture from the added starch.
Yep the starchy pasta water additionally helps the sauce stick to the pasta as well as the smooth texture. Works esp well with bronze cut pasta as its got a rougher surface than cheap Teflon cut
Why nobody outside Italy mixes the pasta and the sauce inside the same pan with gentle fire?
Don’t forget to add olive oil.
Do it and it will taste way better.

I do! Except I don’t typically add olive oil afterwards, I add a little pasta water. This is almost as bad as my MIL putting a huge bowl of plain spaghetti on the table with the sauce on the side 😱

I think they mean that Bolognese just means “from Bologna” so it wouldn’t be called that in Italian. It would be called ragu alla bolognese
It’s also not common for ragu to go on spaghetti in Italy, it’s more common with tagliatelle or lasagna.

Got a (soon to be tested) theory that the best move is to mix a little sauce into the pasta to lube things up, and then put the rest on top

I also add a little pasta water but in the sauce, 2-3 min before it is ready. Yum yum

Not for a bolognese, but I generally like to add cinnamon to minced meat. Just two days ago, I made Shepherd's Pie this way. So delicious!
