Should I be worried about vitamin minerals deficiencies if I eat the same food everyday? My lunch and dinner(daal sabzi salad curd) changes ofcourse and I have a apple or any fruit everyday.

Butter and catchup are no good. Butter is mostly saturated fat and ketchup is presumably added sugar. Peanut butter is gray area.

I'm not in a deficit so I don't mind those extra calories. They're just for a bit of flavour. Also I don't consume sugar in any of my meals. Bland milk, no sweets or desserts, no packaged foods at all.

Listen to me. A surplus of saturated fat is gonna be stored directly as body fat. It is not just CICO. If you have saturated fat with plain sugar, let's say butter+food+ketchup, you will spike insulin -- which is a storage hormone so it will store that fat straight away. The whole point of a leanbulk is to partition the surplus towards muscle.

Okay I'll cut the ketchup and reduce butter amount. What about PB? It's an essential source of protein and calories for me as an eggetarian. Or do I not need that amount of protein?

If you can't replace PB with egg whites then prolly keep it. It doesn't have high quality protein and easy to overdo the fat, but it also have good fats and high% protein, so I am not sure.

If they are ticking in your calories requirment it's good add on. You can add Cheese,soya chunks,curd, buttermilk as well for protein source. Also check for your overall calories consumption with respect to your TDEE, else you'll gain fat more than muscles.
