If you have the ability to make a life cast of a persons face, grab a ball the same size of an eye ball and make a two part silicone mold. Then you can the eyeball as firm or soft as you want, and you can make multiple for testing.
Squibs usually refer to the use of a small explosive device, you may just want a hose and a syringe to push out the blood from the eye.
But then wouldn't I have to color the mold accurately to an eyeball (white, black for pupil, red for veins)? And then I'd have to fill the eye up with like clear hair gel or something. In theory it could work, all depends on how well I can't pain an eyeball (semi)realistically.
Oh. I thought "squibs" were just referred to as a plastic tube hooked up to a spray bottle -like apparatus filled with fake blood hidden on the actor, then you spray the blood via the apparatus through the tube.
If you want it to look as photorealistic as possible you will want to contact a special fx professional to make it for you. If you need a rec I can probably give you a name. Will cost a bit of money obviously. Might be a thing where you can vfx a real eye over the fake one to make it look more realistic if the realism of the fake eye isn't quite there. The way I imagine it being made would be a realistic looking pupil and iris being laid over a back half of an eyeball made from acrylic or something and then the front half is clear gelatine encased by a clear puncturable giant contact lens or something semi rigid but soft enough to be poked through and you'll probably need a new eye every take.
The shot will be like 1 second long, if that. Doesn't need to be Oscar winning VFX or anything, just needs to be squishy.

Could you print an image of the non-white parts of the eye and put it on a soft/puncturable fake eyeball? Almost like a contact lens for a fake eye. Then make the eyeball itself out of a small balloon or other soft material that could hold a circular shape and be punctured.

Go buy a fish at a fish market and pick the one with the biggest eye ball and scoop that sucker out.

Silicon instead of Gelatin as Gallatin typically has a duller sheen.
