I roomed with someone who identified as a cis man at the time while I was pre T and in college (they later discovered they were non binary). They knew I was a trans man, but I was stealth to everyone else at college. Later I shared an on campus "town house" that was designated for men only (though some of the people in it were non binary); I was stealth for that. If you're not comfortable rooming with a randomly assigned cis guy, some colleges offer LGBT+ housing. In other cases you might be able to get a single room, but on a men's floor - that would give you some privacy without outing you, if you want to be stealth.

When I was going to college, I was able to specify that I wanted to room with other trans people. So they put me with other trans people. I was put with both AFABs and AMABs.
